Looking for a nice easy week night meal which incorporates a healthy EVOO olive oil?
This recipe is so easy that no quantities are given, just adjust the ingredients dependent on the amount of people you are serving.

Tomatoes, onions, garlic, EVOO olive oil, salt and pepper to taste and pasta.

Use fresh tomatoes – cherry tomatoes are the best as they have a delicate sweetness that goes well with the intensity of the garlic. Saute your onions and add the tomatoes when the onions are al dente. Give the tomatoes a few minutes and add your garlic and salt and pepper to taste. Add some of Marbrin’s Intense EVOO olive oil. Here you can either add your pasta to the mix or use the tomato mix as a pasta topping.

Our personal favourite, chop some Marbrin black olives and sprinkle on the top once served…..delicious
