Let’s define guest before we give you a deliciously olive oil based dessert recipe that is lactose free. “a person who spends some time at another person’s home in some social activity, as a visit, dinner, or party.”(dictionary.com) so really it is my fault for inviting a guest to my home that was lactose intolerant. Of course when you have a guest for the first time, you want to impress with your culinary skills and finishing off with a great dessert seriously impresses (or at least I think so). After much thought and consideration I put the following recipe to the test and all guests thought it was an absolute winner. Drum roll please, get your taste buds tantalised with our olive oil chocolate brownies and a mixed berry sauce.

Olive oil Chocolate Brownies

1⁄2 cup Olive oil
1 cup sugar
1 teaspoon vanilla
2 large eggs
1⁄4 teaspoon baking powder
1⁄3 cup cocoa powder
1⁄4 teaspoon salt
1⁄2 cup flour

Directions

  • Preheat oven to 180°, all ovens are different so watch your brownies carefully
  • Mix oil and sugar until well blended.
  • Add eggs and vanilla; stir just until blended.
  • Mix all dry ingredients in a separate bowl.
  • Stir dry ingredients into the oil/sugar mixture.
  • Pour into greased 9 x 9 square pans. (any pans will do)
  • Bake for 20 minutes or until sides just start to pull away from the pan.
  • Cool completely before cutting.

Makes a small batch double the recipe and cook longer for a larger batch. For a really decadent icing, use butter and dark chocolate (not for your lactose intolerant guest), melt the two together and then when warm pour over properly cooled Olive oil Chocolate Brownies. The olive oil creates that “stickiness” that you expect from a brownie that differentiates it from a cake.

Mixed berry sauce for olive oil chocolate brownies
This is not really a recipe as tastes vary, some like it sweeter some like a little bit more tart. Sauté the berries in touch of olive oil in a pan, then add some icing sugar and balsamic vinegar. Keep tasting until you have your desired flavour; please leave some for the olive oil chocolate brownies. You can add some flour or corn flour into the sauce for a thicker consistency, I prefer to let it drain into the brownie.
